All About Braising: Previous Picks and Pans
October 2006 Cookbook of the Month. Use this thread to post short notes about recipes you have already tried from Molly Stevens' book, All About Braising. This would be a good place to note your favorite dishes, dishes that didn't work, etc. Other hounds can use this thread as a reference as they choose which recipes to cook. Full length recipe reviews of dishes cooked in October should be posted in the appropriate review thread when they are available.

I've made a bunch of recipes from this book - the couple, so far, I liked the best:
Red Pine Chicken (p.154) - I usually don't like chicken breasts, but stuffed with pork? Good. I did make a note to myself to be very careful to just barely wilt the spinach.
Bisteces Rancheros (p.222) - As the author says, this is an excellent use for those thin shoulder steaks that go on sale all the time. I've made it three times, already, but omitted the potatoes each time. Also, I use at least 12 oz of poblanos, which does not make it spicy, but adds flavor. It's also an excellent potluck contribution.

Chicken Braised w/Pears and Rosemary (p.179) - marvelous.
I have made the sausages with red grapes (variation on the sausages with plums). Very easy, pretty nice flavors. Pronounced a "keeper" by the family.
Glad this book is the cookbook of the month, I am ready for braised dishes!
