Bresaola at home- is this Garbage?
What do you think about this piece of meat? I am feeling a little afraid. To clarify- the white stuff seems to be crystaline salt and some mold.
I couldn't open the link, but am very familiar with bresaola since being introduced to it in Rome several years ago. What's to be afraid of? - it's only cured beef, similar (though not in flavor) to prosciutto. The flavor is not particularly strong. Cover a plate with one layer of very thin slices, then top with a generous pile of arugula, shaved parmesan, and a squeeze of lemon juice. Delicious first course.
