Beef Stock (soup recipes!)

I'm intending to make some beef stock and am curious to hear other people's favorite soups featuring it.
Normally we make vegetable soup with it, but this will be for Rosh Hashana dinner and my (not-Chowish) parents poo poo veggie soups. My first thought was Onion, but I don't have proper mugs to make French so they might be disappointed. Any other suggestions?

    Question: what is the primary difference between beef stock and beef broth in soups?

        Actually, the way I usually make onion soup is to make the soup part, then separately melt/burn cheese on baguette slices in the oven or broiler. Put a piece or two of the melted cheese/bread into a bowl and pour some broth into it. I think it's delicious and less messy this way.

            I wouldn't worry about not having the proper bowls - and I use uman's method as well as my broiler is one of those "at the bottom of the oven" ones. I like to add a little grated cheese at the bottom of the bowl, ladle in the soup, and then put the toasted cheese bread on top. Cheese - I use a combination of gruyere and fontina.
