Help with ingredient hunt... Black Cod & Sakura Ebi
Black cod or sablefish is tough, if not almost impossible, to find in London as it is a pacific ocean fish. Probably cost prohibitive if you do get some. I have used chilean sea bass as a substitute and it worked well using Nobu's miso recipe. Also, my local respected fishmonger, Steve Hatt, on Essex Road says that Icelandic Cod (can even get this at Waitrose fish counter sometimes) is a perfect substitute for black cod. If by sakura ebi you mean small dried shrimp, any store in Chinatown should have it. Hope this helps.
