Would love to replicate the results for my family and friends!
No recipe, but I would experiment with small batches by grating carrot, parsnip, chopping onion, mixing in an egg and a little bit of flour, and then making some small pancakes and frying them in a lberal amount of very hot oil.
I have various latke recipes at home that I'll check out, but you could also check for sweet potato recipes and substitute carrots and parsnips.
I don't know the Whole Foods recipe but this is a recipe for a really good version with zucchini.
