Cheese platters and storage time

We're doing cheese platters for our wedding reception. (Everything else is up to the caterer, so please don't worry.) Does anyone know the best way to hold the platters overnight, and transport them? Should we cut everything and lay it out the day before, wrapping them tightly? Should we cut everything the day before, and have people lay them out the day of? Anyone who has done this?
