How to cook fresh flour lo-mein noodles from Russos?

I want to make a stir fry tonight and have never used fresh lo-mein noodles. Do I boil them (if so how long?) or can I just throw them in to the stir fry? I don't want them to fall apart. Anyone have a good system?

  1. You boil them for just a couple of minutes (still a little underdon) then, strain and throw into stir fry.

      This is what I would do too.

    2. I microwave them until they're warm, then add to the wok.

        Oops! I assumed these were cooked noodles which are ready to eat. If not, they should be boiled first.

      2. Depending on how thick the noodles are. If they're the really thin, thinner than angel hair pasta noodles I wouldn't go more than 1 min. You want the noodles to be just undercook when adding to your stir-fry. This way the noodles will finish cooking and absorb some of the sauce.

        If they're the regular egg noodles about the size of spaghetti then 2-3 min. should be sufficient. I usually don’t measure the cooking time, I just place the noodles into the boiling water, bring it to a boil then add 1 cup of water in wait until it boils again and add a second cup of water in, when the water boils for the third time the noodles are done.
