caja china roast pig for 60--how much beans?

I'm roasting a 75lb pig in my Caja China this weekend, hoping to generously feed approximately 60 people.

I'm also going to make the traditional accompaniment of black beans and rice and I'm not sure how much I should make. Any suggestions?

There will also be some grilled chicken served (for the sqeamish), and a couple of different salads and slaws.

  1. I don't know how reliable this site is, but it is a good beginning reference.

    1. Figure about a 1/4 to 1/2 a cup per person of beans. The thing is you're gonna need a fairly large pressure cooker for these guys (or do in batches a day earlier. a night in the fridge actually enhances flavor the next day). You also have to fry some plantains!

        I agree with this suggestion, meaning COOKED cup. With all the yummy food, they might not eat as many beans you might think...

      2. Generally, one cup of dried bean will yield 3 cups of cooked.
