French Onion Soup - Balthazar Cookbook

For any of you who have this cookbook (and if you don't, I highly recommend it), I made this soup last night and it was fantastic. Perfect thing for a cold rainy Sunday night dinner. I have a gas oven with the broiler on the bottom, so I couldn't put the bread/cheese on top of the soup itself, so I just broiled the bread and cheese, put some grated cheese in the bottom of the soup bowl, added the soup and then put the bread on top to serve. The addition of port was lovely. (I ended up skipping the mushroom/truffle oil addition - my husband, who thinks "the richer the better" actually thought it would be too much - so I'll just make some grilled bread with melted fontina, add the sauteed mushrooms and truffle oil for a little appetizer later this week.)

  1. There's a great onion soup recipe that I tried from this web site:
    (I have nothing to do with the web site.) I'm always looking for recipes that use wine as an ingredient. This soup has white wine and a little cognac as well.

      Thanks. The recipe I used also includes thyme & bayleaf.
