Banana Peppers -- ideas?

A neighbor gave me a huge bag of banana peppers fresh from her garden. I have no idea what to do with them -- the only thing I can think to do is roast them. I'm looking for something a little easier than that (spent all day yesterday in the kitchen using the zuchinni and eggplant she gave me!). She says she fries them and eats them on a sandwich. Anyone ever done this? Any other thoughts? Thanks in advance...

  1. they make pretty good refridgerator pickles, although you have to use them quickly. You could also fry them(or blister the skins in a really hot dry cast iron pan, then toss with olive oil and garlic) and eat them on crostini or toss them with pasta. But they are damn good on a sandwich with mortadella, especially the kind with pistachios in it.

    1. You can stuff and grill (or broil) them. Make a long slit, scoop out the seeds, and stuff with anything you like, but a mixture of soft cheese (goat, cream cheese, shredded cheddar or jack, chopped shrimp or leftover grilled pork are tasty ideas. Wrap in a slice of bacon and grill. You can make these and freeze them, too.
