The Lee Kum Kee website has a couple recipes, both for the regular and extra hot versions.

XO sauce is a fairly new condiment that surfaced in the 80's and named to take advantage of connotation so prestige and rarity from XO cognac - it doesn't have any cognac in it! It's really good stuff particularly on bland foods like rice, noodles or tofu and also goes nicely with fresh seafood. It has dried shellfish like prawn and scallop along with chiles and garlic. It easy to find, in fact they probably have it at your supermarket, but you'll enjoy a much broader variety at a Chinese (or other Asian) market.

XO sauce is a condiment. You can add it onto things just as you would the chilli sauce during dim sum.

You can also add it in at the end of cooking something. It goes very welll with stir fried squid

XO sauce is a spicy sauce similar to chili sauce but has more flavorful ingredients (cured ham, dried shrimps, dried scallops, etc).
