Whole Hog Cafe - chain barbecue in Santa Fe

The recently opened Whole Hog Cafe (an Arkansas chain - http://wholehogcafe.com/home.htm ) is going, well, whole hog at lunchtime nowadays. We got there at 11:50 a.m. on Wednesday and found the place packed. It got more so. Lots of state workers from the Highway Department (sorry, NM-DOT) and the DPS.

The meats were good, and well-smoked (though certainly not up to the standards of local places like, say, Robb's Ribbs). The brisket was lean, yet flavorful. It had apparently been doused with a sweet rub - lots of sugar to nab the unwary Atkins Dieter. The pulled pork was fatty and flavorful (though dry), very salty, and was nice. The chicken was moist and not especially smokey.

They have seven different sauces: six on the table (all pretty sweet) and one at the counter (the "Volcano" sauce - heat, but not much other flavor). I found that mixing Volcano sauce with the #4 sauce gave me something I liked.

Anyway, there's another BBQ place in SF now - thought that Chowhounders might want to know. By the way, lunch for the two of us (one chicken sandwich, one half-pound of brisket, and one pulled pork nachos with one soda and one water) came to $19.99. There's no tip jar up front and it's call-to-the-counter service, but we left a couple of bucks for the busser. Not a bad place.
