Jack Bishop's Italian Vegetarian
I've made the mushroom sauce for the polenta and love it (a LOT). There's a yummy chickpea dish with dressing of a sundried tomato sauce (don't remember specifics beyond this, sorry), that I think is really good. There's a chocolate/hazelnut gelato that is a lot of work, but quite good. I actually don't think i can remember a single dog I've made from that cookbook--it's all in all quite good.
