Pasta in a White Truffle Sauce

bleader Aug 11, 2006 09:53 PM

I was in Rome and had a Trofie in a white truffle cream sauce. Does any place in NYC have anything like this? Thanks

Assenzio in the East Village has an amazing gnocchi in truffle sauce.

Seriously, is salsify not a verb?

          No, it's a root vegetable.

Aquavit has a dish of Salsify "noodles" in a white truffle cream that's just devastating. Again, though, season is everything with truffles. White Albas probably won't be around until at least late October.

Of course, lots of places make truffle sauces with truffle oil year round. It's only for the fresh ones you have to wait.

That sounds wonderful. I didn't think anyone used Salsify anymore. How very NY!

Sette Mezzo on the UES has it in the fall. White truffles are not in season until the fall, though, so I doubt you'll find it on any menu right now.

I don't know if the truffle sauce was white, but I recently had a ridiculously tasty pasta with porcini mushrooms and truffle sauce at Felidia's. It's only a week later and I already crave it. Unfortunately, I'd have to buy a whole new wardrobe...
