Sauces for tortellini

I have 2 bags of frozen tortellini from Trader Joe's a gorgonzola walnut and then an artichoke tortellini. What kind of sauces can I make for each? Thanks, Richie

    Because tortellini are already so filling, I usually like them with a really light sauce.
    For the gorgonzola ones, I could see either a pesto-style sauce or a mushroom sauce (not cream-based, though).
    For the artichoke ones, I would suggest a gremolata-type sauce, heavy on the lemon. Or maybe something with saffron? Like this one, minus the mussels: http://www.suppertonight.co.uk/mussel...
    But if you want a real change, I'd skewer and grill the tortellini, then serve with a dipping sauce.

      I perfer simple sauces with Tortellini so you really get a great snap of flavor. Aside from brown butter or garlic oil, I also ADORE pesto. Especially if the cheese in the tortellini is VERY sharp! :)

        I cook the tortolinis and as they are draining sautee some olove oil, black pepper and garlic. Toss all together and add nice grated cheese. Yum! I will also add proscuito (I know, my spelling stinks)and or fresh basil

          I am sure this is not what you want to hear, but sometimes just plain butter or browned butter is perfect, with salt of course.
