I was making latkes this morning and grated way more potato than I needed. Besides making more latkes, what can I do with grated potato? There's about 2 to 3 cups of it left over.
Potato Bread?! - yum
Fry in bacon grease with a little onion and green bell pepper.
Parmensan cheese mixed with the potato, dip a chicken breast dunked in beaten egg in it, and fry.
veggie burgers. or add it to soup.
or make a gratin with cheese and store it in the fridge and re-bake later.
