I bought a package of butterscotch chips with the intent of making cookies. I assumed that there would be a butterscotch chip recipe on the back, but there wasn't. Could I just use any chocolate chip recipe and substitute with butterscotch chips, or would I need to make an adjustment with the sugar? Thanks in advance!

I just use butterscoth chips with the standard back-of-the-nestle-package recipe, although I usually use them alongside chocolate chips. You might want to use only brown sugar and a bit less flour to get a really caramel-tasting cookie, if you want to emphasize the butterscotch.

I think they're great added to an oatmeal cookie instead of raisins (so much better for you, but I just don't like 'em!).

I actually use rolled oats in my recipe, so does differ- this is the one I use if you want to compare it or try it. I also use the chips in pancakes & for haystacks- yummy chips!

3/4 cup butter, softened
3/4 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 teaspoon salt
3 cups rolled oats
1 2/3 cups butterscotch chips

Preheat oven to 375 degrees F
In a large bowl beat the butter & sugars together. Then add the eggs and vanilla, beating well.
Stir together the flour, baking soda, cinnamon and salt. Gradually add the flour mixture to the butter mixture and stir until blended. Stir in the oats and the butterscotch chips. Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake for 8 to 10 minutes, until the edges begin to brown.

I like butterscotch cookies in birdnest or ranger cookies... you know the kind with oatmeal, coconut & corn flakes. the crunchy/coconut kind of off-sets the sweetness of the butterscotch.

let me know if you want the recipe, I can post.
