Baked shrimp toast

Has anyone tried to make shrimp toast in the oven? I would love to see if I could broil it instead of frying since the bread soaks up like a gallon of oil.

Yes, I make shrimp toast regularly in the oven, 350F for 8-10 min. I actually find using a thin metal pan is best, since it allows the 'toast' to crisp on the bottom.

If you don't have a recipe, the epicurious one linked below is a good foundation to build on.

I have a recipe from 365 Snacks, Hors D'Oeuvres & Appetizers. It always works. I spread the bread on one side with butter, spread my shrimp mixture and bake @ 375 for 10 or so minutes. I think the slower cooking makes the toast crisp on both sides, therefore sturdier.
