i think jewel bako makimono's salmon in papillote with uni is probably the best cooked uni dish i've ever had. great combination of rich oceanic flavors.
that said, it's hard to beat just good ol raw uni. on friday, masato-san prepared an uni tasting for our party featuring both red and white uni from japan. ahh, creamy, sweet and tidal. interesting contrast to the usual santa barbara stuff most places serve.
