lots of cucumbers

What to do with them?

    You can make a wonderful chilled cucumber and avocado soup with wasabi (paste or powder works). It is so good and just needs blending in a food processor or blender.

    Also, I made up my own recipe for a cucumber and mango salsa. Experiment with somehting like that...you can add any number of herbs to make a quick salsa for chips, toppings on soups sandwiches, quesidillas, etc.

        I make Tziki (Greek yogurt sauce)...or I just peel em, sprinkle salt and chow down.

            Braised cucumbers (yes, like lettuce, there are plenty of recipes for warm dishes...) and chilled cucumber soup.

              You can sauté them with butter and top with fresh mint.
              Or use thick slices as a base for canapés (fyi - delicious with tapenade).
              You can also make cucumber "boats" and fill them with tabbouleh or another chunky salad.

                    Nothing fancy but during the summer months our dinner table was not complete without a small dish of sliced cucumbers in cider vinegar.

                      Cucumbers and onions, a similar dish, is one of my all time favorites of my mother's cooking. Its one cumcumber and one sweet onion, thinly sliced, covered with a marinade of one part water, one part white vinegar, and 3/4 part sugar. We usually multiplied this recipe however.
