Here are a few options:
For an easy, no ice cream maker necessary version, try this:
1 can (14 oz) sweetened condensed milk
1 cup chocolate syrup (SO prefers Hershey's dark chocolate syrup)
2 cups heavy whipping cream
Stir together condensed milk and chocolate syrup in a large bowl.
In a separate bowl, whip the cream to firm peaks.
Fold whipped cream into chocolate mixture in 3 additions.
Pour into a plastic container (I use the reusable plastic ziploc storage containers) and cover with plastic wrap touching the surface.
Freeze until solid.
This is a very sweet chocolate ice cream, with a flavor that reminds me of the ice cream I had in Indonesia, I think because of the flavor to the sweetened condensed milk.
For a very chocolaty ice cream made in an ice cream makers:
2 cups cream
2 cups whole milk
1 cup sugar
4 oz dark chocolate, broken into small chunks (I use the stuff they sell at Trader Joe's that is broken of a big block, wrapped in plastic and sold by weight)
1 cup cocoa powder
1 tsp kosher salt
1 tsp vanilla extract
Combine milk, sugar and dark chocolate chunks in a sauce pan. Heat over medium heat, stirring until sugar and chocolate dissolve. Add cocoa powder and salt and whisk to dissolve. Remove from heat and blend with an immersion blender if necessary to completely incorporate cocoa powder. Add cream and vanilla and stir to combine. Chill base and prepare according to ice cream maker directions.
If you use a dark chocolate with higher than 70% cocoa mass, I suggest adding a tablespoon of corn syrup to help the mouthfeel of the finished product.
