Looking for Classic Chicago Foods

I am making an alphabet book for Chicago, and I need foods indigenous to Chicago, as well as where to get them. I would like to know places that are famous for the following foods: Kielbasa, Pierogies, Italian Beef, Italian Ices, and any others I may have missed. (I already got steak and deep dish pizza covered).

I have only a couple or three days from today, July 20, to find and photograph these delicious subjects. Thanks in advance for your ideas.

    1. Would regional haute-Mexican fit in with your concept? Chicago's Rick Bayless wasn't the first to heighten people's awareness of the richness of Mexican regional cuisine, but he was surely the first (in the midwest - and possibly in the country) to popularize it widely through a very successful pair of restaurants (Frontera Grill and Topolobampo) - which are quite possibly unique to Chicago.

I've never been but did see a great show about it on Food Network (Great American Festivals or some such) about 2 years ago.
