        <content>Bitter melon chips are one of the easiest things to make, and are best eaten while still hot. The packaged kind aren't as good because they're not fresh. Slice a bitter melon crosswise as thinly as possible, remove the seeds from each slice, and fry in some oil. Frying tempers the bitterness, but if they are still too bitter, soak the slices in salt water for 30 minutes, then pat dry before frying. 
After frying, salt them a bit -- a dash or white pepper is a good option. That's it.
Great with a highly hopped IPA -- you know why.</content>
