Red River Smokehouse--top flight Salmon spread
At the Cambrian Plaza Farmer's Market in San Jose(runs from 4-8pm Wed) one of the more popular booth is the Red River Smoke House. Situated in Princeton By the Sea, near Half Moon Bay, they smoke a range of fish and make a killer smoked slamon and cream cheese spread that is full of smokey salmon that is visible (gasp!) to the naked eye. The predominent flavor is that of fish with a cool dairy chaser. These guys are Farmer's market regulars throughout the Bay Area so keep an eye out.

Thanks for the heads-up. I love their smoked salmon. I stopped by when they first opened about a year ago. I will definately look for them at other farmers markets. Great place.
