what to do with lime juice

I bought a 16 oz. bottle of Nellie and Joe's Key West Lime Juice that was to be used to top off a jar of preserved limes...it turned out I had enough fresh lime juice so I never opened the bottle. Now my problem is what to do with a 16 oz. of lime juice! Its best by date is 7.27.06 so I'd like to do something with it before it starts losing its flavor. I'd like a recipe that uses all or most of the bottle of juice...any suggestions? Thanks!

    I don't know if the bottled stuff is the same as fresh, but ceviche calls for lots of lime juice. Maybe use it for that?

      Put liquid in an ice cube tray. Once frozen, empty cudes into a ziplock. You then have for a long time for future use preserved as cubes in the freezer!

        Roast up a ton of fresh corn on the cob and coat with the lime juice and chile. Delicious!

          I had something similar for the first time last night (roasted corn, topped with a mixture of salt, cayanne, and lime juice). Excellent!

            I'm going to the Farmer's Market tonight and am definately picking up Corn and Limes!! I'm jonesin' for it now :-)

          I would not bother with it for anything where you want a really vibrant, fresh lime flavor; let your nose be your guide. Citrus juice looses a tremendous amount of vitality within a day of juicing; the acid remains but much of the layers of perfume and aroma are gone. Very short half-life; this is why so many recipes explicitly call for fresh-squeezed citrus juice. Bottled juice already starts with the handicap of pasteurization, which also burns off flavor.

            You should definitely try Nellie's, if you haven't already. It is extrordinary. It is amazingly good. I realize fresh sqeezed is best. But (a) it is difficult to get true key limes from Key West, and this is an excellent substitute. (b) we don't all have time to squeeze oranges for breakfast, squeeze limes for a party or a quick drink. Sometimes we have to use store-bought. I would say telling someone to "not bother" is a little strong. Besides, as I said, Nellie's is very high quality.

            yeah, key lime pie-my recipe scales down to almost the same as the one on the label.

            ps ya only got 10 days left to use it... ;)

                Add one part triple sec, one part tequila, serve over ice.

                  Their key lime pie recipe is awesome. Add dollops of mascarpone cheese to the top.
