flannel cakes

I posted yesterday about johnnycakes but I was wrong! What I meant was flannel cakes. I see that they are served at Musso & Frank but is that the only place one can get them? I am used to the ones served at the defunct Nibbler's on Wilshire in Beverly Hills.

    I know flannel cakes from the East Coast--Pennsylvania and Maryland specifically. I know of two different ways of making them. One is to use yeast in the batter and let it ferment overnight. Then, just before cooking, put a bit of baking soda in the batter and it makes a very light kind of pancake.

    The other way is to separate the eggs and whip the whites separately, which also yields a light texture, but not the tangy taste of the yeasty fermented kind.

    I didn't realize you could get them in Los Angeles. Back where I'm from they are sort of a "low country" food.
