Has any made candied jalapenos? How did you do it and how did they turn out?
I make this chocolate cherry chili fudge for my friends and would like to dress it up for gift giving this year.
One of the things I wanted to do was maybe put a candied jalapeno ring, or a curled strip of candied jalapeno, on the top. I'm going to try to make them this weekend, but am afraid they will turn out olive green and mushy.
Any recommendations? I suppose I could add green food coloring to the syrup I simmer them in, but I don't really want that kelly green look either. Can you buy candied jalapenos?
Other ideas I have are
- cook jalapenos in simple syrup long enough to flavor it, then poach dried cherries in the syrup to plump them and give them some heat, and use those for toppers. Or set them in a candied pepper ring, if those come out OK.
- as above, and use the jalapeno sugar syrup to brush the top of the cooled fudge, then sprinkle with coarse sugar and a little cayenne
I've made the candied jalepenos - or "Cowboy Candy" (recipe from this site) and they are easy, delicious, make a great gift and look great in a jar - not sure, though if they would suit your plan for a stand-alone decoration.
What might be cool for your decoration is to carefully paint a WHOLE washed Jalapeno, including stem, with a small soft brush in beaten egg white - while still wet, and turning your hand, dust heavily with SUPERFINE sugar (not powdered, but finer than granulated) letting excess fall away - cover completely, then let your frosted Jalapeno dry thoroughly, you should end up with a frosted pepper for your decoration, with the green color of the pepper showing through the frost of sugar.
I have not one it with a pepper, but did frost some red and green grapes, turned out great. As with anything involving sugar and egg whites - don't do this on a hot humid day.
We call them 'Cowboy Candy' and it's true, the green gets a little faded - but they are delicious - I make them in much larger batches since the kids eat them as fast as I make them.
1 1/4 cups sliced fresh jalapenos
1/2 cup sugar
1/4 cup water
1 drop green food coloring (optional)
Slice jalapenos, and place in a small sauce pan.
Add water and sugar.
Cook over medium heat until boiling.
Reduce temperature to low, and simmer until the liquid has reduced, and the sugar water has become syrup-like (about 30 minutes)
Let cool and place in clean jelly jar.
Store in refrigerator.

The color isn't bright green, but you can certainly add green food coloring, if you're into that sort of thing. The vinegar, IMHO, deepens the heat. I have no scientific knowlege of why, but that's my take on the taste. I love sweet/hot/tart flavors!
either recipe you use for the jalapenos will turn out the same. by cooking the sliced jalapenos in the candied syrup they will initially turn a horrid olive drab color and you will think that you have messed it up. but after cooking in the syrup for approx. 10-15 mins they start to candy and turn a bright translucent green. i use a ration of 1 to 3 red to green jalapenos for mine to package as gifts at x-mas, they are so pretty and so fantastic to use in any recipe that calls for sweet pickles or for relish.
I haven't made them, but I just did a search for "candied jalapenos" and found a bunch of recipes. They seemed to be repetitions of two recipes, one involving onion, vinegar, jalapenos, sugar, and various spices, one simpler and only involving jalapenos, sugar, and water.
As for color, I think you're stuck with the olive green. They would need to be cooked for a little while at least for the sugar syrup to penetrate, and would probably not be bright green.
