Fries @ The Hat & Other Chains
This is a continuation of another thread from the LA Board (http://www.chowhound.com/topics/show/... ).
I haven't been to The Hat in a while, but I don't remember their fries to be THAT good. I've had better fries from In-n-Out (when ordered well-done) and Islands.
I just don't think The Hat to be all that, pastrami, fries or otherwise.

Alright, I have to weigh in here. First of all, the Hat's fries, overall, are far better than In-N-Out. While they may start out in the freezer, they are thicker cut, and when you bite in to one, you KNOW that you have some potato in your mouth. Crispy on the outside, fluffy and potato-ey on the inside.
In-N-Out fries, down well done, are an abomination, dried out, and flavorless. In-N-Out fries, done "normally", immediately out of the frier, when they are almost too hot to put in your mouth, are at their best. When I swing by In-N-Out I may order a burger or two for myself, and I will always order two orders of fries. I immediately start eating one order of the fries as soon as I pull out of the driveway, that is the only time they are good, when they are incredibly hot and fresh. When I get home I will start to eat the second order or fries with my burger(s), invariably I will throw out much of the second order, because as they become even a few degrees cooler than when just our of the frier, they become limp and tasteless.

Actually, that's been the biggest mystery about In and Out fries. I know of several places which do them the same way, and they are great! Case in point, Skoobys in Hollywood. They slice the potato right in front of you and then in the fryer and no longer in the time it takes In and Out, you have possibly the most amazing Fast Food Fries out there!! Perhaps it is the oil (Although Skoobys is pretty clean too, the only do fries in it) or the temp they have the oil at or some kinda deal with the devil that Mr. In and Out made so he could make the best burger and somehow got stuck with the suckiest fries...

While the fries at The Hat are not necessarily all that, they are definitely better than what In N Out puts out.
Say what you will about their burgers, but the fries at In N Out are a disgrace.
