Scrambled Eggs

not a lost art so much as a lost artist...;) ya pay some hack min wage ya get min quality. same as with an omelette-brown, or worse, and it cracks in half while folding. Why i make em at home.

  1. Not quite the same skill level, of course, but the same places tend to make excellent over-easy eggs.

I know scrambled eggs are supposed to be made over low heat. But..I don't have the time or stomach to wait. I get the pan med-high, put butter in it...and as soon as it melts I throw in the eggs I have beaten to within an inch of their lives. I swirl them around about 5 or 6 times and slide em onto a plate. They are buttery and very tender...everytime.
