I know scrambled eggs are supposed to be made over low heat. But..I don't have the time or stomach to wait. I get the pan med-high, put butter in it...and as soon as it melts I throw in the eggs I have beaten to within an inch of their lives. I swirl them around about 5 or 6 times and slide em onto a plate. They are buttery and very tender...everytime.
