Unfortunately I agree, I think almost all the homemade ice cream and gelato places in Hoboken have closed, thanks in no small part to the arrival of Ben & Jerry's, Coldstone Creamery, etc. All that remain are the soft serve/Italian ice places on Washington Street.
Although it's not gelato, Pauline's Chocolates on Jefferson between 2nd and 3rd serves excellent homemade ice cream with interesting flavors. It's not made on the premises, but I understand it comes from a small vendor in Jersey City, and it's delicious.
As far as other places in North Jersey, I know about Ciao Bella in Tenafly, La Dolce Vita in Edgewater, and I think that Cafe St. Honore in Nutley also does gelato. I also wouldn't be surprised if there were places in Garfield, which has a big Italian population.
