Wasabi Potato Salad

The Librarian Jul 4, 2006 05:44 PM

We are all addicted to the wasabi garlic potato salad from DELICA rf-1 (Japanese deli) at San Francisco's Ferry Building. Does anyone have a recipe for it or something similar? I think I could try to put it together on my own (wasabi mayo, edamame, sugar snap peas, romaine), but thought I'd check with all of you experts first. Thanks!

There is an interesting take on this recipe here: http://www.forks.ca/hot-damn-wasabi-p... . However, the description I've always found at DELICA calls for wasabi mayo and garlic -- the referenced recipe includes neither. I would personally replace half the milk with wasabi mayo and incorporate muddled garlic into the mash. The delica version isn't as mayo heavy as most potato salads you find.

I've made wasabi mashed potatoes using wasabi powder.

Here's the URL for the recipe which may give you some guidance as to how much to use.

I don't see any replies yet, but I hope if you experiment with this that you will share your results. TIA
