re: Pan
Agreed. A larger restaurant just wouldn't be considered top-notch if it didn't serve good fish. In fact, most of the better places put "seafood restaurant" in the Chinese name, just to show they are in the major leagues. I can't offhand think of any restaurant in Chinatown about which I'd say, "that's a great restaurant... but steer clear of the fish!" (This is especially true of Cantonese restaurants and places featuring other seacoast cuisines; I woundnt rush to try the fish at the vaguely Uighur-Manchurian A Fan Ti in Queens)

Grilled fish is not particularly common in Chinatown as steaming and deep frying are the more common methods of cooking. East Ocean, 53 Bayard, has a great sweet and sour fish fillet dish. Also several restaurants adjacent to Fuleen on Division St. feature all kinds of seafood and are quite good. These include East Seafood (17 Division), Sunrise 27 Seafood (27 Division) and Hua Du Seafood (31 Division).

Don't know about grilled, but I would recommend Fuleen for fish.
