I was wondering if anyone has any recipes or cooking suggestions for wild asparagus.
Asparagus was abundent at my local farmer's market this weekend (Montreal), but I was especially delighted to find someone offering the wild variety. I'd love to hear if anyone knows of something special to do with them.
Saw them at the Jean Talon Market too. Not cheap but about a third of the price they were a year or two ago. Have only had them steamed and used as a garnish (the price was too prohibitive for any other use), with fish if I recall. Have been told they really aren't asparagus at all but a kind of grass. The flavour's delicate and, well, kind of grassy.
I'm from the school of thought that says when you get excellent ingredients, such as very fresh wild asparagus, do as little as possible to it. In this case I would brush with olive oil, season with salt and pepper, and then grill them. I would avoid extra sauces or dressing and let the vegetable speak for itself.
