I just made a fantastic, easy recipe last night from epicurious.com. I had a beautiful eggplant, onion and lots of basil, and ended up with this delicious recipe for Rigatoni with Eggplant, Tomato and Ricotta:

Once the little bit of prep work was done in advance, the meal came together very quickly and easily -- took about 20 minutes after cutting the veggies.

One of my favorites:
Thai Turkey
Slice into thin slices 1 onion and 1/2 red bell pepper. Saute in a little olive oil. Add a pound of ground turkey, and cook until brown. Add (to taste) fish sauce, sriracha sauce, brown sugar, and lime juice. When it's done, add a handful of basil leaves, and serve over brown rice.

Have you checked out Cooking Light.com yet? I love their search function and they have reader reviews on each recipe as well. Epicurious.com also has a terrific search function that allows you to plug in quite a few criteria (low fat, low calorie and quick being several of them). If you go to their home page, click on recipes, then click on "advanced search" you'll find it. Enjoy!
