Help me remember this quote

I'm trying to recall a quote that goes something like "the creation of a new dish is equivilant to the birth of a star." I think it comes from some old French chef but can't find a source for it. Tried Bartlett's but came up dry. Anyone know what I'm talking about and who said it?
