I recently went to breakfast at a Chowhound recommended restaurant. I wanted hard boiled eggs. The waitress said "Sorry but we aren't able to make hard boiled eggs. You can have scambled, over easy, etc, etc"

I didn't know hard boiled eggs were that difficult to make. So what gives?

It could take up to an hour to prepare from scratch, between boiling the water, boiling the egg, and cooling down and peeling. I'm sure they are very busy at the grill and don't have somone that could just stop everything and concentrate on making you a hard-boiled egg. Maybe if you ask in advance?

Though I rarely order hardboiled eggs, I have been able to order hardboiled egges at restaurants before. I always ask for them with the shells on.

It just surprised me when they said no.

Sometimes I'll get the same response when I ask for poached eggs. I think it's just a time issue or maybe a definition issue. Once the waitperson didn't know what it was and said no, they only had chicken eggs. ;p

They're not difficult, just time-consuming. Any restaurant I've worked at that has hard-boiled eggs in something gets them in big bags, already cooked and shelled.
