I am having trouble finding a recipe for seviche using scallops. The silver Palate cookbook has one that I may try but it says to serve with avacado slices. This does not appeal to me. Any other recipes or ideas for what to serve it with as an appetiser?

Beth's right-there as many Ceviche recipes as stars in the night sky.
For Scallops I'd add a tiny bit of Coconut-either milk or grated-and some Chile of some variety as well as sweet Onion.
I agree that Avocado is quite rich (not that Coconut isn't).
