I'm usually the one offering up recipes, but now I need help. I just got asked to make a tray of apple squares for an event tomorrow. I'm at work now and have no time to recipe hunt, and although I have recipes for pies, tarts, dumplings and even apple brownies, I don't have one for apple squares.

What the group asking me to make them has in mind is something like this... Made on a jelly row pan....layer of pastry...apples...then either another layer of pastry on top or open face (with Streusal maybe?) They key is that it can be easily cut into squares. I don't think they want me to just make a rectangular apple pie...but they may be what I end up doing.

Any other recipes or ideas???

Thanks,

Trish

Trish, you might consider these "Apple Pie Bars" from the Land O'Lakes website...it calls for a glaze but you can easily sub in a streusel topping if you prefer...I've made these for church fellowship hour and they are very good. Link below.

Thanks for posting the Land O Lakes site, they have some really good sounding recipes on there. Lots of baked items that would be perfect for potlucks etc.

You're welcome but be careful with all that butter! LOL! I think our favorite recipe from that website is their Chocolate Caramel Pecan bars...link below....it's sort of like a glorified "Pine Bark" recipe...mind-numbing! Recipe says to use milk-chocolate pieces...we love dark chocolate on it instead.

Made the Land O'Lakes bars, and they came out perfectly. I wanted bars that held together and weren't drippy and these worked just fine. Good recipe, thank you!

I can't speak for other locales but Apple Squares are an old Chicago tradition. When we used to have mama & papa bakeries all over town, they were a standard offering. They are two layers of pastry with a layer of apples in between and a powdered sugar glaze icing on top. Sometimes a yeast pastry is used abd sometimes a short pastry. The whole thing is baked in a large flat pan then cut into squares after baking and icing. I have some recipes in books that compile community recipes---the church kind that are bound on a spiral. Email me direct if you're still looking for a recipe.
