        <content>hi, everyone -
 
wondering if anyone knows how long homemade mayo lasts.  i'm bringing in sandwiches for my co-workers tomorrow and i want to use up the homemade mayo that i made on sunday.  will it still be good tomorrow?
 
is there a way for me to test if it's still good, short of angry co-workers queuing up for the office toilet?

      <content>Homemade mayo is unfortunately risky because you have to use raw egg yolk, a possible source of salmonella poisoning.  I would not recommend keeping it overnight.  </content>
