Why are these carrots rubbery?

I bought a bunch of organic carrots at a farmers' market Saturday. I went to eat them tonight, and they are rubbery. Surely, I didn't store them too long. Were they probably not that fresh? I did store them in the refrigerator. Is that a no-no?

    If you left the greens on the carrots (and the same thing happens with beets and parsnips) then they can get rubbery very quickly. Snap or cut the greens off before storing the roots. If you want to keep them, wrap them separately and put them in the fridge.

      throw them in a bowl of water with ice for about twenty minutes
