Recipe for Spinach Pesto
I make Spinach Pesto when I don't have fresh basil growing in the garden. Wash and stem 2 bunches of fresh spinach leaves and make sure to dry them as much as possible. I don't have exact measurements to give you because I don't go buy a recipe -- sorry. Place the spinach in a food processor with 1-2 cloves chopped garlic, about 1/2 cup freshly shredded Parmesan cheese (or more to your liking), and olive oil...season to taste with salt and fresh-ground black pepper.
