Recipe for Spinach Pesto

I'm looking for a recipe for spinach pesto that does not contain any basil or parsley. Other herbs would be fine. Basically, I want something even as simple as parmesan, garlic, spinach, oil, S&P... Any recipes for a great spinach pesto?

  1. I make Spinach Pesto when I don't have fresh basil growing in the garden. Wash and stem 2 bunches of fresh spinach leaves and make sure to dry them as much as possible. I don't have exact measurements to give you because I don't go buy a recipe -- sorry. Place the spinach in a food processor with 1-2 cloves chopped garlic, about 1/2 cup freshly shredded Parmesan cheese (or more to your liking), and olive oil...season to taste with salt and fresh-ground black pepper.
