There is also a board focusing on kosher food and cooking on this very site. Some browsing there would be a good place to start.

There is website all about kosher cooking with some really great links to other informative websites.
Another really good site is:

Keeping kosher is hard to do if you are just starting out. You will need seperate sets of dishes, pans etc. If it just Kosher food you like there are so many great cookbooks out there. Two I like are:
*The New York Times Jewish Cookbook: More than 825 Traditional & Contemporary Recipes from Around the World
*The Hadassah Jewish Holiday Cookbook: Traditional Recipes from the Contemporary Kosher Kitchens
Of course you could always go for "Jewish Cooking for Dummies" LOL

It is not hard to start, you don't need to do everything all at once. For example you could start but just not eating pork or shellfish, and not mixing meat and dairy. There are all different degrees of kosherness, of course there is only one way to do it if you want to be technically correct, but in my experience people generally adapt the rules to whatever suits them.
