What's your favorite Texas & Tex-Mex Cookbook?
Since I left Texas 18 years ago, Ive relied on inherited recipes as well as gorging when Im back visiting for my Texas, Southern, BBQ and Tex-Mex food fix. I have a few Southern cookbooks. The only Texas cookbook that I have is Threadgill's.
Ive decided its well past time to branch out so for my upcoming birthday, I've decided to splurge on The Best Texas / Tex-Mex Cookbooks EVER!
What cookbooks should I buy?
I've searched Amazon and come up with a few books that look interesting
Matt Martinez Culinary Frontier
Tex-Mex Cookbook by Robb Walsh
Texas Cowboy Cooking by Tom Perini
Food of Texas by Caroline Stuart
Pinch of This by Liz Carpenter (historic recipes)
Capital Cookbook by Edith Williams (historic recipes)
Food Lovers Guide to Texas (more food porn than cookbook)
Do y'all have any feedback on any of these?
Are there other places I should look (UT Press, Republic of Texas Press)?
Are there any books not on my list that you LOVE?
Note that I don't need entire cookbooks devoted to Chili or BBQ since I'm set in that regard.

Try Stephan Pyles's books; he's an authority on Texan cuisine. "The New Texas Cuisine" may be out of print, but you should be able to obtain a copy from an online seller, eBay, etc. "New Tastes from Texas", a newer title, is in print.

I have and like The Only Texas Cookbook by Eckhardt. I LOVE Texas Home Cooking by Jamison, use it for the King Ranch Casserole, basic pinto beans, fajitas. By the same author, The Border Cookbook, which includes some Southwest and Northern Mexico dishes, is also terrific.

"El Norte" is a cookbook by James Peyton. It is technically a Mexican cookbook, but since it concentrates on the northern and US border region of Mexico, the recipes apply to general TexMex cooking as well. I love this book and use it all the time.
Another good one is David Garrido's "Nuevo TexMex." I also second the Bill and Cheryl Alters Jamisons' books mentioned by another poster.
I also moved from Texas just 7 years ago.
