        <content>My buttermilk (which I opened about a week and a half ago) thickened over the weekend so that it is now the consistency of yogurt.  
 
Has it gone bad or is this just a harmless development of over-activity by friendly bacteria?  Can I use it as a buttermilk or cheese culture?  At what point is buttermilk spoiled?

      <content>It lasts a long time--I've kept it for months and it's still good. Basically, I use it unless/until it gets moldy.
 
Did you shake it up? It may have separated and just be thick on top.</content>

      <content>I used buttermilk when making Christmas dinner last year.  About mid-January, my husband mistakenly used the buttermilk in his White Russian and got pretty sick.  So I wouldn't be so sure.</content>

      <content>Growing up in the South, we both drank and cooked with buttermilk pretty regularly.
 
Fresh buttermilk will keep in the fridge maybe two weeks at the outside.  Beyond that, throw it out and buy fresh.
 
Spoiled buttermilk will have a rancid, "off" odor and flavor.
 
Based on your description of what's happened with your buttermilk... well, if it were me, I'd toss it.
