All these leftover pimentos, what to do?
Had a martini party the other night and pulled the pimentos out of the queen olives from a gallon size container so we could stuff them with other desirable goodies. The dilemma now is what to do with all the leftover pimentos, there must be close to a cup!!!!
I'd hate to waste them. Any suggestions?
How about some filling for creamy chicken enchiladas. I would rinse them first. Then saute 2 large onions, slowly in some butter until they are carmelized. Add some shredded cooked chicken, the pimentos, about 6-8 ounces cream cheese, and a little green enchilada sauce. I like to add some fresh chopped cilantro at this point. Dip some flour tortillas in green enchilada sauce and place some of the filling on the tortilla and roll up. Pour some green enchilada sauce in the bottom of your baking pan and place filled enchilada in it. Pour enchilada sauce over all and top with grated Monterey jack cheese. Bake at 350 until bubbly and cheese is melted. This is a recipe that is adapted from a Sunset recipe.
