        <content>I'm a big toast/cereal/pancakes queen, but now it's passover and I'm staring at the Streit's box, seeking inspiration. Unfortunately, I loathe matzoh brei and cereal-style matzoh farfel, and plain ol' matzoh and butter gets old pretty quick.  Anyone got a good recipe for Passover pancakes or rolls, or other breakfast treats? </content>

      <content>I got this recipe for muffins from some friends of mine who are caterers. 
 
Passover Banana-Nut Muffins
 
1/2 cup walnut oil, or other oil
3/4 cup granulated sugar, or more to taste
2 eggs
1/2 cup potato starch
3/4 cup matzo cake meal
1 teaspoon cream of tartar
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup walnuts or pecans, finely chopped
1 1/3 cups mashed banana
 
Spray a muffin tin with vegetable oil or line with muffin papers.  Preheat the oven to 350 F.
 
In the bowl of an electric mixer, beat oil with sugar. Add eggs one at a time and continue beating. Add mashed bananas and combine well.
 
Combine matzo cake meal, potato starch, cream of tartar, baking soda, and ground cinnamon. Add the chopped nuts and incorporate.
 
Add the dry ingredients to the egg - banana mixture, until just combined. Do not overmix.
 
Pour the batter into the prepared muffin tins, filling them to the top.
 
Bake in a pre-heated 350 F. oven for 25-30 minutes or until the top is brown and a toothpick inserted in the center has moist crumbs.
 
Makes 12 muffins.

      <content>Here's a sweet breakfast dish that traditional in some homes:
 
Geschmirte Matzo
 
1/2 cup Milk
4 Matzo squares
16 ounces cream cheese
1/2 cup sour cream
1/2 cup sugar
1 tablespoon potato starch
Juice of 1/2 lemon
3 eggs
1 tablespoon cinnamon sugar
 
Preheat oven to 350 F.                                 
 
Pour milk into a large shallow dish and lay matzos in one at a time, turning to soak on both sides.  Set matzos on a greased baking sheet or on a sheet covered with greased foil.
 
Beat remaining ingredients except cinnamon sugar until smooth. Spoon onto matzos, spreading to cover. 
 
Sprinkle with cinnamon sugar.
 
Bake in oven for 10 to 15 min., until puffed and lightly brown. 
 
Remove from oven.  Cut each matzo into 9 squares. </content>

      <content>Passover Cheese Blintzes
 
3   Eggs, beaten
3/4 cup Matzo cake meal
1 1/2 cups Water
1/2 teaspoon Salt
-----FILLING-----
1 pound Dry cottage cheese (or farmers' cheese)
1 tablespoon Sour cream
1/2 teaspoon Salt
1   Egg
1 tablespoon Sugar, or to taste
--------
oil, for pan frying
Sour cream, for accompaniment
 
To the beaten eggs, add the salt, alternately a little of the cake meal and water, mixing thoroughly.
 
Pour into a small hot greased non-stick frying pan only enough batter to make a very thin pancake, tipping pan from side to side. Toss out on a towel, fried side up.  Make a number of blintz crepes this way. 
 
Place a heaping tablespoon of cheese mixture on each crepe, fold sides of sheet in over mixture to form an envelope, and fry again on both sides until brown.
 
To make filling:  Press cheese through a sieve, add remaining ingredients and beat until smooth.
 
Serve with sour cream.</content>

      <content>Passover Honey Mandelbrot (Biscotti)
 
3   Eggs, separated
1/4 cup Margarine, softened
1 cup Matzo cake meal
1 teaspoon Orange peel, grated
1/2 cup Honey, heated, divided
3/4 cup Almonds, whole or coarsely chopped
 
Lightly grease and flour* two 8"x 4"x2 1/2" loaf pans; set aside. Lightly grease a baking sheet; set aside.
 
Preheat oven to 350F.
 
Separate eggs. Beat yolks until light; beat in margarine until blended. Stir in cake meal, 1/4 C. honey and grated peel.
 
In a separate bowl beat egg whites until stiff but not dry. Slowly pour remaining honey in a slow stream into egg whites while beating.
 
Fold egg-mixture into yolk mixture until well blended. Gently fold in the almonds.
 
Pour 1/2 the batter into each of the 2 loaf pans.
 
Bake at 350F. for 30 to 35 min.. or until wooden pick comes out clean.
 
Remove from pans; cut into 1/2 slices. Place cut side-up on lightly greased baking sheets.
 
Return to oven and bake at 250F. for 25 to 30 min. longer or until lightly browned.
 
Cool completely and serve or store in an airtight container.
 
Makes about 32 cookies.
 
If stored, mandlebrot may require crisping after a few days of storage. To do so, bake in a preheated 250F. oven for about 20 min. cool and serve.
 
*Use matzo meal to "flour" the loaf pans.</content>

      <content>Chremsel (Matzoh Meal Pancakes)
 
2 tablespoons Butter or margarine
8 large Eggs
2 cups Whole milk
2 cups matzo meal
1/2 cup Cottage cheese (4 ounces)
1/2 cup oil
1/4 cup Pecans or walnuts (1 ounce) finely chopped
1 tablespoon vanilla sugar (or to taste)
1 teaspoon Salt
Maple syrup (or flavor of your choice)
 
Break eggs into mixing bowl.  Beat until thick and lemon-colored. Add milk, matzo meal, cottage cheese, oil, nuts, vanilla sugar, and salt. Beat until smooth.
 
Melt butter in large skillet or griddle.
 
Drop spoonfuls of batter onto skillet or griddle.
 
Set flame at moderate, and fry until golden brown on both sides.
 
Serve hot, accompanied by syrup (or, if preferred, honey or preserves).
 
Serves 4.

2   Eggs, separated
3 tablespoons Oil
1/2 cup Buttermilk
1/4 cup Sugar
1/3 cup Matzo cake meal
1/8 cup Potato starch
 
Beat egg whites with an electric beater until soft peaks form. Gradually add sugar and continue beating until stiff peaks, but not dry.
 
Using same beaters, beat egg whites with oil until light, about 5 minutes. Add milk, continue beating.
 
Gradually add dry ingredients. Batter will be thick.
 
Fold in egg whites in two batches.
 
Pour batter into prepared waffle iron.
 
Batter can also be used for griddle pancakes.
 
Serves 4</content>

Combine 1 cup veg. oil, 3 cups water, 1/4 cup sugar, 1 tsp. salt - bring to a boil, then remove from heat and add 3 cups matzo meal, mix well. Add 8 eggs, one at a time, mixing well after adding each one.  Oil hands and form into balls about 1-2 TBS each.  Bake 350 for 1 hour.  Best passover bread item I've ever tasted. </content>

      <content>I know you said you don't like matzah farfel cereal, but if you like regular granola, you can substitute matzah farfel for the oats and hardly tell the difference.  It's so easy, too.  We have always struggled with breakfast (my husband ADORES cereal), and this year we found a winner.
 
Passover Granola
 
3 C matzah farfel (whole wheat is best)
1/2 C pecans
2/3 C sliced almonds
1/2 C shredded coconut
4-6 tbsp butter/margarine
1/4-1/2 C honey
1/4 tsp salt
1 tsp Cinnamon
1/4 tsp Nutmeg
1.5 C dried fruit (raisins, dates -- we used a tropical fruit mixture in addition)
 
Preheat oven to 350 degrees.  Mix farfel and nuts together in bowl.  Melt margarine and add to farfel-nut mixture with honey, salt, and spices.  Bake mixture for 15 min on a cookie sheet.  Stir halfway through so it browns evently.  Cool.
 
Mix in fruit once mixture has cooled.
 

Obviously, you can substitute any kind of fruits and nuts that you like!  I bet this would be good with dried cherries, too...

      <content>Cool! thanks--I love granola, and I'll give this a try! I also found a good pancake recipe that I used this morning:
 
Passover Pancakes
 
3 eggs, separated
1/2 cup milk
1/2 cup matzoh meal
1/4 tsp cinnamon (or to taste)
2 tsp sugar (or to taste)
pinch of salt
 
Beat egg yolks until thick and pale. Mix milk, matzoh meal, cinnamon and sugar together, then stir into egg yolks. Beat egg whites with salt until stiff. Fold into matzoh mixture. Fry on a greased griddle until brown, flip and cook until done. Serve with butter and syrup. You could probably add nuts or chopped fruit to this, too. They were nice and fluffy. </content>
