panicked roommate needs help butterflying

My roommate is making stuffed turkey breasts for passover. The butcher for some crazy reason would not butterfly the breast. We have a cookbook that includes treaky instructions on butterflying with a "Z" shape result, but I feel that prob does not apply for this recipe. Help! she's looking for clear, simple instructions by monday morning. thank you.
