I will be using the coloring to tint white chocolate, therefore it would be great if there was a negligible taste involved in the coloring. I have a set of 5 colors - sage, rose, orange, yellow and violet. They are vegetable based colors and are suspended in a sugar syrup. The colors you achieve are not as vivid or dark as commercial colors. It has some vegetable flavor, like I can definitely smell spinach in the green color. But when a few drops of the color are mixed in a large quantitiy of the item (you are coloring), one really cant make out any vegetable flavor. The colors are quite expensive, but I bought them retail. I think the 5 colors cost me around $12....the website currently lists them at $17. The colors come with a little booklet suggesting their use in various ingredients like meringues, white chocolate, icing etc. I havent found any natural dyes in bulk and have been looking for quite sometime.
