homemade Thin Mint cookies - any ideas?

I'd like to experiment with baking a homemade version of Girl Scout Thin Mint cookies. Does anyone have a recipe to suggest for the cookie part? I can figure out how to do the chocolate coating, but don't know where to begin for the body of the cookie. My cookie-baking experiences are pretty limited.

  1. It seems to me that you'll want to make a thin, crisp chocolate wafer cookie, and flavor it with pure peppermint extract, then coat with chocolate. I don' have a tried-and-true recipe, used Google recipe search and found that many recipe sites have this same chocolate wafer recipe (which you could certainly cut in half - it makes a ton). Keep in mind that peppermint extract is strong, so you don't need to use much (1 to 1 1/2 tsp. is probably enough even for a big recipe).

      Actually, for the real Thin Mint flavor, you want peppermint *oil*, not extract. Yes, there is a difference- you can find out for yourself by getting a box of Thin Mints, and a box of Keebler Fudge Shoppe Grasshopper Mint cookies. Taste them side by side and the difference will be readily apparent.

      You may notice when looking at the ingredients on the two boxes that the lists are awfully similar... there is a reason for this. Much of the country's Girl Scout Cookies are made by a company called "Little Brownie Bakers". Turns out it's part of Keebler! The two recipes are virtually identical, except that the Girl Scout ones get peppermint oil while Keebler gets peppermint extract. The peppermint oil makes for a much better confection, but the Keebler cookies will do when you're jonesing for Thin Mints in the middle of November and those Girl Scouts are nowhere in sight.
