        <content>I bought Juanita's Mexican Style Hominy the other day and the info on the can says that that in a half cup serving that there are 10 g. carbohydrates and 6 g. of fiber. Most other brands (American) weigh in at somewhere between 17 and 27 g. carbohydrate in a half cup and 3-4 g. fiber. I'm thinking that it must be the type of corn used but does anyone know for sure? I'm guessing it must be field corn lower sugars but why the fiber difference?</content>

      <content>"Feed corn" and non super sweet corn tends to have bigger seeds and tougher skins, if I recall correctly from my grandpa the corn farmer.  Therefore, more fiber.</content>

      <content>Interesting! !  Your comments drove me to open "The Complete Book of Food Counts" - a Christmas present - must be a message in there somewhere.
 
There are several entries for hominy, 1/2 cup, canned - first number is grams of carbohydrate, second number is grams of fiber
 
Golden:
  Allens/Uncle William                     27, 4

  Bush's Best with peppers            14, 3
 
Mexican:
  Allens/Uncle William Pepi             25, 3
 
White:
  Allens/Uncle William                        22, 4

I guess, bottom line, is that, if you're limiting carbs, hominy is not for you.</content>

      <content>I have the book too. That is where I was puzzled, the book gives such high counts and says hominy is low in fiber and then the Juanita's and I believe the other brand I saw with much lower carb counts and high fiber was La Preferida. I used some of the Juanita's last night and it was a bit chewier.</content>

      <content>The different corn used could make a difference. But these companies are all pretty small operations. I suspect they did not send their product to a lab for a scientific evaluation. They may just be guessing at the figures. But you could go to the Juanita's web site and ask them.</content>

      <content>Noticed the same thing when I bought hominy earlier this week.  (Are you also making the hominy chicken chili from Everyday Food? -- turned out really well and super easy.)  
 
The Juanita hominy is much chewier than the white hominys I've had in the past.
